No-Knead Crusty-Chewy Bread

Making bread is one of my happiest activities. I first started making bread two years ago because the plastic bags that bread came in drove me crazy 💚🌎 but I soon discovered how easy and gratifying it was to make my own from scratch.

This recipe is a mix of two no-knead bread recipes. The recipe makes a BIG loaf, and we’re only two, but Nikolas is a carb monster so a loaf lasts us maximum 4 days.

This recipe takes time. The first rise requires 8-10 hours so I like to stir it up before I go to bed and leave it overnight. This recipe also requires a Dutch oven (but if you don't have one, use an oven-safe pot with an oven-safe lid). Either way, it needs to be at least 7.5" across and 4" deep.

NO KNEAD CRUSTY CHEWY BREAD
🥖 3 cups all purpose flour
🥖 3/4 teaspoon instant yeast
🥖 2 tsp salt
🥖 1-1/2 cups cool water
🥖 Handful of cornmeal or semolina (optional)

Stir all ingredients together in a large bowl. This step literally takes 10 seconds. Cover and leave for 8-10 hours.

Coat your Dutch Oven interior with olive oil. Coat it really well. Then dust with cornmeal/semolina.
After the 8-10 hour first rise, dump your dough into the Dutch oven. Cover and leave for 1.5-2 hours.
Heat your oven to 450°
I like to drizzle the dough with a little more olive oil and a sprinkle of cornmeal/semolina. Bake your bread covered for 30 min. Then continue to bake for another 15 min with the lid off. Don’t let the top scorch. Let loaf cool before slicing.

Common! how easy was that? This is a great thing to try during the Flatten the Curve quarantine. You’ll master it in no time, and feel prepared should the stores run out of bread.

I’ve made this with both All Purpose and Bread Flour with no noticeable difference. I’ve also made it with cornmeal and with semolina. Cornmeal is a bit crunchier. My brother in law made this recipe without cornmeal or semolina, so if you don’t have it, I wouldn’t worry.
